If you want to start with a single variety cider, and you want to learn more about Dabinett apple characteristics, I recommend you start with this. Made in Herefordshire, England, Townsend Dabinett 2021 is a sparkling petillant naturel (pet nat) cider with a wonderful personality, loads of acidity and tannins and marvelous citrus notes, typical of this apple variety.

Tasting Notes on Townsend Dabinett 2021

Energetic and crisp, this single variety 2021 Dabinett cider  from Townsend Farm is a quite intriguing cider with a great deal of texture and considerably more agreeable to other Dabinett single variety cider have tasted before. Like many other Dabinett ciders, there are notes of grapefruit and orange on the palate; and thanks to wonderful wild yeast it has funky notes to the nose, giving plenty of personality.

The carbonation is very vivacious and it hits the palate with energy, with a perlage that bears an uncanny resemblance to prosecco.

For those who are not particularly fond of West Counties cider or, in particular, Herefordshire cider, I would still recommend to try Townsend Dabinett 2021. Even my husband, who is not a huge lover of West Country cider, did not run away from this Dabinett single variety, which means that is probably even more agreeable thanI initially realised.

Food pairing

With such great perlage, this cider goes well with fatty dishes, or creamy cheeses such as Charouce or a baked Camenbert.
