Ross-on-Wye Dymock Red 2022 cider is a full of flavour, tannic sparkling cider that has been a true surprise to me. With its energetic bubbles, vigorous tannins and fruit notes, it is very different to other single variety ciders.

Tasting Notes
- See: Transparent, with vibrant traces of carbonation, rich orange in colour, bordering on light amber
- Smell: fruity notes, sharp apple with delicate notes of red berries—sweet and tart at the same time
- Taste: dry, medium acidity, good tannins; lively bubbles reminiscent of prosecco, with sharp apple flavours and delicate–almost imperceptible–notes of raspberries; medium finish that ends in a really pleasant mouth-watering feeling.
Notes from the producers
A Gloustershire variety that has been praised throughout history by John Evelyn (1670), Hogg & Dull ((1886) and Gabe Cook (2022), yet this may be the first single variety Dymock Red that you have ever tasted. A medium bitter-sharp apple with a very pleasant flavour: a gently acidity and soft finish. This bottle was made from just one lare tree we have on the farm; but in 2019 we began efforts to graft more, to ensure this once popular apple has a chance to shine again!
Personal Notes on Dymock Red 2022
Dymock Red is a beautifully tannic, bold cider made with bitter-sharp apples that have loads of character, leaving you with a very intense mouthfeel. When you sniff it, it becomes apparent right away that it is made with a traditional cider apple variety – you can smell Herefordshire all the way.
Pouring it into the glass and seeing those fun bubbles arising reminds me of a bank holiday weekend, full of lightness and celebration.
In the mouth however, Dymock Red turns around and reminds you of what a strong personality it has–all those confident tannins paired with light fruit notes and a medium acidity.

I like this cider a lot because it doesn’t get boring – every time you take another sip there is something that you haven’t noticed before. It could be how clean the palate is left at the end of one sip, or how bubbles explode and disappear like fireworks in your mouth–or even those dainty notes of berries that linger subtly in the background.
Food pairing
Dymock Red goes well with goat cheese, especially, semi soft one. Avoid salty cheeses that heighten the acidity of this cider; you can also pair Dymock Red Ross-on-Wye with a rich, meaty dish such as sausages or a proper Italian ragù.
