Whin Hill Dabinett Premium Cider is a strong, full bodied single variety cider. Made from Dabinett cider apples to produce a medium sparkling cider. All our ciders and perries are made from natural, locally produced ingredients and contain no added water, flavourings or artificial sweeteners. We firmly believe that a quality ingredient married with our meticulously high production standards is the key to producing such fantastic varieties of smooth, full bodied ciders and distinctive perries!

Personal Notes on Whin Hill Dabinett 2024

Unlike some other single varietal ciders, such as Temple Yarlington Mill, Somerset Redstreak or Kingston Black, Whin Hill Dabinett 2024 struck me right away as very agreeable yet beautifully vibrant. 

The fruity notes are so delicate that – in my modest experience – I struggled identifying them, perhaps overpowered by a prominent acidic note to the nose.

In the mouth, Whin Hill Dabinett reminds me of a bone dry white wine with mild acidity and a full body – there are some gentle sweet notes of fruits, that almost come as a surprise with such a tannic presence. Finally, if you are patient enough and let Whin Hill Dabinett warm up a little, you will be surprised by winter spice notes, almost cinnamon-alike. 

This Dabinett cider reminds me of comforting Sundays, sitting back and enjoying a family get together – it is full body, rich and unforgettable like many extended families, but has sweet and surprising notes that make you almost forget about any harshness in it.

Food pairing

With such wonderful tannins, Whin Hill Dabinett is destined to accompany savoury meat. I would pair it with succulent gammon and crisp crackling – the tannins cutting through the fat of the crackling and the sweetness contrasting the gammon’s saltiness.
