Notes from the producers

On off small batches of real cider made of unwanted Sussex apples. Wild fermented, long matured, unfiltered, unpasteurised, un carbonated.

We took the apples from the back orchard at Cockhaise Mill farm and blended them with eaters to give a pleasing dry with plenty of complex notes. After the picking we picnicked with Roger and Cathy and friends from the cider club right on the edge of the bluebell railway while steam trains whistled by.

Personal Notes on Cockhaisy 2022

This is one of the first ‘real’ natural ciders ever tasted. It’s also the first one that made me ask “what the hell am I drinking, how can this be cider?”. It’s fun, it’s savoury and it has enough depth of character   to be the lead character of it’s own TV show.

This is truly a cider for those looking to explore something outside of the mainstream, from concentrate ‘ciders’ you might find in any random supermarket. This is a ballsy, intense and classic Western Counties cider that will not disappoint you if you dare to try it.

Food pairing

Any salty fatty food would go well with Cockhaisy by Bignose & Beardy; Italian cured meats such as seasoned prosciutto or coppa will bring out delicately sweet notes that will make you want to eat more and drink more. Fabulous.
